Beyond the Shelf: Why Freeze-Dried Produce Outprices Fresh Harvests Across Nigerian Markets

There is an undeniable paradox in modern consumer markets when a feather-light packet containing merely a handful of freeze-dried strawberries costs significantly more than a heavy basket of fresh strawberries fresh off the farm. While casual observers might attribute this price disparity to aggressive retail markups, the economic reality is rooted in specialized industrial engineering and staggering operational overheads.

Unlike traditional heat dehydration or sun-drying—methods historically utilized across West Africa to preserve harvest surpluses—freeze-drying, scientifically known as lyophilisation, is a multi-stage, high-precision process. The fruit is first subjected to extreme freezing at temperatures dropping below minus 40 degrees Celsius. Subsequently, it is placed inside a deep industrial vacuum chamber where low pressure allows the frozen moisture to convert directly from ice into vapour without passing through a liquid phase.

This delicate sublimation process preserves up to 98 percent of the fruit’s original nutrient profile, structural integrity, and natural flavor. However, operating commercial vacuum freezers requires immense electrical energy continuously for 24 to 36 hours per batch, creating a massive cost baseline before the product even leaves the factory floor.
